How to cook Polos Ambul Curry (Baby Jack Fruit Curry)

What you need (Ingredients)

A polos (A baby jack fruit) , Red onions, Green chillies , Maldive fish
chopped garlic and ginger, Rampe and Karapincha (pandan leaves, curry leaves)
,Chilly powder , curry powder ,saffron powder , Salt , Goraka ,Several cups of thick coconut milk
.

How to cook

Peel the polos and cut into pieces. Then mix with saffron and goraka. Temper chopped garlic and ginger,red onions green chillies maldive fish and curry stuff. Then add the pieces of polos into it and mix well. Add 4 cups of thick coconut milk and cook in slow fire. Remember Keep it over night and use it.

How to cook Kiri Kos (White Jack fruit curry)

What you need (Ingredients)

3 cups of Jack-fruit ,1-2 onion, chopped 2 green chillies,
2 cups thick coconut milk,1 tsp mustrad seed,4-5 curry leaves
1/2 tsp saffron powder,1 tsp curry powder,1 tsp chillie powder
salt to taste

How to cook

Cut the Jack-fruit into stripes. Clean the seeds and cut them into two.

Mix the Jack-fruit, the seeds and all the other ingredients
except the mustrad and the coconut milk in a pan. Add a cup of
water to it and stir. Put the pan on a medium flame cover
and cook until the jack-fruit is well done.

Grind the mustrad seed and stir it to the Coconut milk. Add this
to the pan and bring to a boil, stiring frequently.

Learn to prepare (cook) Lunu Miris - (Chilli Sambal)

Last time I posted how to cook "Kiribath". This time I'm going to tell you how to prepare "Lunu miris". Lunu Miris is widely used in Sri Lanka as an accompaniment to hoppers and Kiribath.

What you need (Ingredients)
250grams Small Red Onions, 5 Table Spoons Dry chilli powder , 5 tablespoon crushed Maldive fish,Salt to taste,Lime juice

How to prepare (cook)
Mix the sliced onion, chili powder and Maldive fish. Add lime juice and salt mix thoroughly. Serve with Kiribath or Hoppers.

Learn to cook Kiribath - (Milk Rice)

Kiribath is a traditional Srilankan food made from rice. "Kiri" means milk and "bath" means rice. Kiribath is an essential food for any Srilankan traditional festival.

So let's learn how to cook Kiribath

What you need (Ingredients)

2 Cups of Kakulu Rice (White Kakulu rice or Red Kakulu rice), 2 Cups of thick Coconut milk, 2 table spoon of Salt, 3 Cups Water .

How to cook

Wash the rice well.Put Rice and water into a pan and bring to a boil. Cover and cook for 15 minutes. Add coconut milk and Salt. Stir in the coconut milk. Simmer till the coconut milk is absorbed and the rice is very soft and creamy. Cool slightly and turn out into a flat dish. Level the sides and top with a handle of wooden spoon. When cold, cut kiribath into square ordiamond shapes.

Learn to cook Biththara Curriya - (Egg Curry)

What you need (Ingredients)

5 Eggs boiled,Oil for frying, 1 small onion sliced, 1-3 small hot green Chilies sliced, 1/2 cup canned tomatoe or one medium fresh tomatoe chopped, 1 tsp raw curry powder (see recipe for raw curry powder), 1/4 tsp turmeric, 1 clove garlic, 1/2 tsp ground black mustard, 1-2 inch piece cinnamon, 1 tsp red chili powder (optional), Few curry leaves and rampe, Salt to taste, 1/2 cup Coconut milk

How to cook

Remove shells from hard boiled eggs and fry until the eggs turn light brown. Drain the oil from the eggs. In a saucepan take all the other ingredients and add enough water to cover the contents halfway.Heat the ingredients for a few minutes and then add the deepfried eggs.Simmer for few minutes longer. Add coconut milk and simmer for few minutes.Add salt as per taste.

What you need (Ingredients)

2 cups scraped, fresh coconut or desiccated coconut (add 1/4 cup of warm water and mix well to moisten the desiccated coconut),2 small pearl onions or shallots, sliced.
1 small green chile, sliced,1 clove garlic, sliced. 1-2 tsp Hot red chili powder,1 tsp Salt.
1-2 tsp Maldive fish (optional).


How to cook

Grind or chop all ingredients except coconut, in a grinder or chopper (a mortar & pestle can also be used).Once the ingredients are crushed and mixed thoroughly, add the coconut.Continue to grind until the coconut turns evenly red and all ingredients are well mixed. (This can also be done with fingers).Squeeze half a lime. Mix well.Taste and adjust salt & lime.

Kiri Maalu White Fish Curry (not spicy)

What you need (Ingredients)

1Lb King fish (or Salmon or Tuna or Shark or Scallops )
2 cups coconut milk,3 cups water,1 onion
2tablsp mustard,1tspn turmeric,1 tsp garlic
to taste salt,1 tblspn lime juice

How to cook

Wash the fish and cut steaks into slices. Add water, onions, salt garlic, mustard and fish cook for 15 minutes. Add coconut milk allow to stand for 1 minute. Finally add the lime juice.

Learn to cook Ala Wanjanaya (Spicy Potatoes)

What you need (Ingredients)

1lb potatoes,1 onion,2 tsps Hot pepper powder 2 tblsps Oil,1 clove (tsp) Garlic (powder),1 tsp salt 1 tsp sugar,1 tsp mustard,2 small green peppers

How to cook
Boil or potatoes. Remove skin and cut into slices . Slice onions and green pepper. Add oil to a pan and heat. Add onions and fry for a minute. Then add hot pepper powder, garlic, salt, sugar and mustard and stir in for about 2 minutes. Finally add potatoes and green pepper mix in and cook for 3 minutes.
